Abstract

Melamine plate products are one type of food packaging product that is widely used today. Melamine plate
products are in great demand because they have advantages including light, not easily broken, colorful,
attractive designs, and affordable prices. However, the increasing use of melamine plate products, people
must be aware of the circulation of melamine dish products whose quality is not good. Melamine plates can
be dangerous to health if used for high temperature food, because it can trigger the release of formalin from
melamine tableware into the body. This study aims to analyze the effect of food simulant temperature on
formaldehyde migration from melamine plates and to determine the safe food temperature for melamine
tableware. The method used to determine the levels of formalin extracted from melamine plates uses SNI
7322: 2008, with Nash reagents as test reagents. The results of this study are the temperature of the food
simulants influence the levels of formaldehyde extracted from melamine plates. The higher the simulant
temperature, the greater the formaldehyde extracted. At a food simulant temperature of 25°C, the extracted
formaldehyde content range from 0,0732 – 0,609 ppm. At a food simulant temperature of 60°C, extracted
formaldehyde content range from 0,756 – 6,903 ppm. At a food simulant temperature of 80°C, extracted
formaldehyde content range from 2,707 – 206,58 ppm. At a food simulant temperature of 100°C, it produces
extracted formaldehyde content range from 6,536 – 855,6 ppm. Safe food temperature for all types of
melamine plates both foodgrade and non-foodgrade is 25°C because the extracted formaldehyde content
produced is less than 3 ppm.
